I just noticed that the Application ID for FusionAuth is the same 3c219e58-ed0e-4b18-ad48-f4f92793ae32 in the examples, my docker instance, and our staging instance. Is that to be expected?

Yes, it's the fusionauth application id, defined here: https://github.com/FusionAuth/fusionauth-java-client/blob/master/src/main/java/io/fusionauth/domain/Application.java
